Diamond Bar event celebrates kimchi

Kimchi is probably the most recognized dish of the Korean culture and one organization is using it to unite people of all backgrounds.

Serving Group, a local branch of the international volunteer-based organization Mannam, sponsored a kimchi-making contest in front of the Super H-Mart market in Diamond Bar on Saturday.

"The idea is that by bringing the Korean culture through kimchi, everyone can come together through one thing," said Shannon Turk, event coordinator.

The second annual event featured 11 teams who competed to be named the top kimchi-maker.

One of these competitors is Ellie Chung, a 50-year-old Anaheim resident who has been making kimchi for her family for 15 years.

"This is about serving the neighborhood, so I thought I might as well share my talent," Chung said. "Everyone has a family recipe or a secret recipe, so everyone's kimchi can be different.

Kimchi is a fermented blend of vegetables and spices that combines sweet and spicy flavors. Traditionally, it's served as a side dish in Korean cuisine.

Chung uses all-natural ingredients including cabbage, green onions, lettuce, wild leaves, pine nuts, kiwi and red pepper paste.

Judge Kim Eun Sook of Los Angeles has been making kimchi for more than 60 years. The 82-year-old said she prefers kimchi that is healthful.

"Right now, kimchi is spreading quickly," she said through a translator. "It might be one of the main foods people will like and enjoy across the world."

However, the event wasn't just for experienced kimchi connoisseurs. Serving Group members also invited those of non-Korean descent to make and taste their own kimchi. Sook instructed them to cut the cabbage and green onions and mix it with their hands with the red pepper paste.

"It was very interesting, said 21-year-old Nathan Howard, after making kimchi. I'm used to Mexican food, but this is a different kind of spice."

The judges, including Diamond Bar Mayor Steve Tye, chose a kimchi recipe prepared by Grace Lee, 42, of Fullerton as their favorite. The unusual kimchi was served on ice and included sweet potatoes.

Another favorite of both the judges and the crowd was a kimchi including squid, eggplant and Japanese miso soup made by Clara Kim, 50, of Diamond Bar.

After the kimchi entries were judged, those who attended the contest were able to taste some of the dishes entered. This was the part Sarah Kang of Placentia most looked forward to.

Oven-roasted nuts make a wonderful snack that can be used any time of day or night. In addition to this recipe with pecans, walnuts others, such as raw cashew nuts, almonds or walnuts, may be used to make oven-roasted, spiced nuts.

Power festive evening

Roasted, spiced walnuts, served in a decorative glass bowl, make a wonderful addition to the holiday table. Customers can help themselves with toasted pecans in the oven, until the main meal to be served. Butter, Worcestershire sauce and a variety of spices turn ordinary raw nuts in a festive cocktail treatment.

Ingredients for Toasted Spiced Pecans 4 tablespoons (1/2 stick) unsalted butter 2 tablespoons Worcestershire sauce 1/2 teaspoon ground cumin 1 teaspoon onion powder 1 teaspoon garlic powder 1/4 teaspoon cayenne pepper 1 teaspoon seasoned salt 1 pound whole pecans Directions for Toasted Spiced Pecans Preheat the oven to 325 degrees Fahrenheit. In a small bowl, whisk together the cumin, onion powder, garlic powder, cayenne pepper and seasoned salt. Set aside the bowl of spices. In a small saucepan, melt the butter over medium heat. Whisk in the Worcestershire sauce. Whisk in the spice mixture. Turn the heat off and stir in the pecans, using a large mixing spoon, until the nuts are well coated with the spiced butter mixture. Spread the pecans onto a large baking sheet. Place the baking sheet in the oven and cook for 10 minutes. Remove the baking sheet from the oven, and stir the pecans. Return the baking sheet to the oven, and cook for another 10 minutes. Remove the baking sheet from the oven, and pour the spiced pecans into a large stainless steel, or other heat proof bowl, until cooled to room temperature. Place the toasted, spiced pecans in a decorative serving dish. Left over spiced pecans can be stored in an airtight container for up to one week. Recipe Tips and Suggestions

1. For a spicier toasted nut, add a bit more cayenne pepper to the recipe.

2. Other spices, such as coriander, paprika, or chili powder, may be added to the oven roasted pecan recipe if desired.
