Intuitive eating: Using your body's own wisdom to guide food choices

As he says, animals certainly do not have the faintest idea how much calcium the U.S. Surgeon General or the USDA is saying is needed to prevent osteoporosis (which changes almost every year.) And yet animals do not get osteoporosis. Humans, on the other hand, get so caught up in what science and the latest nutritional gurus are saying, that we forget that we have our own internal guidance system. This intuition is a delicate system, and the clarity of our choice can depend greatly on how healthy our bodies are. For example, someone who has been eating sodas, chemically-laden fast food, or large amounts of alcohol, will not be able to listen as effectively to these messages, as someone who eats fresh organic produce out of their garden every day. And yet when I ask my patients to give up foods that are unhealthy, most people will not feel like doing this until they have added nutrient and energy-rich foods to their diet that do help them access this intelligence. Then, I find that people naturally want less and less sugar, caffeine or chemical foods, as they realize that they feel better on foods that are closer to mother nature. It is a poor analogy to what actually happens in the human body, and it makes fats look like the most evil foods on the planet because they have the most calories per gram. The truth is that pigs fed coconut oil actually lose weight and other oils like olive, sunflower and sesame are very good for you, while the refined carbohydrates and sugars in our diet are heavily responsible for our current obesity and diabetes epidemic. Government, endeavors to transform petroleum into food at the expense of fair economy, the environment, and our health.  Do heart disease, obesity, and diabetes ring a bell?  They're all linked to industrial food.  Pollan takes the stance not that of the typical tree-hugging enviro-conspiracy theorist, but of a horrified, intelligent observer looking into the system as an outsider.  Skeptical?  Read it.  Your library probably has a copy on the shelf right now.
